I took a gamble and threw together a smoothie for Zella because she was begging for a milkshake after her dance class today. I had to use what we had on hand (and needed to do grocery shopping two days ago), but it payed off - big time. Even despite having spinach in it, which for her is normally a deal breaker, she loved this combination and asked for seconds! So I knew it was one I had to share.
I say it's a mommy & me smoothie because it makes enough for both mommy and littles. So here's what you'll need.
2 cups frozen organic mango chunks
1 large organic granny smith apple
1/2 cup loose spinach leaves
1/2 cup unsweetened vanilla almond milk
1/2 cup vanilla non-fat yogurt
8-10 pineapple mint leaves
Blend till liquified and violá! If you're using a Ninja brand blender like I do, blend on 3 for about 1 minute.
I get most the ingredients from Trader Joe's. The pineapple mint is an herb plant from Trader's that gets a lot of use in our house. It's great in sun teas, ice creams, cocktails, and minced to mix with salads. Plus it's cheap to buy and smells wonderful growing in the house if you have a place that gets enough direct sunlight.
